The precise weight of the watch box was 213 grams (I weighed it when I got the package).

It's a little too heavy for the EB/missing Item method, which Is why It was detected as stated In their message.

I thought Amazon measure the weight at their warehouse and the carrier do too, so they crosscheck the carrier's weight to see if it matches. Is this how it works?

Correct.

But they cannot confirm the weight at the time the package was delivered to your address. If you didn't mention the package wasn't tampered with, the watch was stolen after It was weighed at the depot.

Since the earbuds and watch were in the same package, and on the package it said it was 0.5kg, how could they say the weight was correct upon delivery? I mean, since the package was less than 500 grams, it gets rounded up to 0.5kg. If I just ordered the watch on its own, which was 213 grams, the package would have still said 0.5kg because it's still within that 0 to 500 gram range.
Couldn't I say that someone must have taken the watch out and replaced it with carrdboard instead? and that the weight of the package doesn't reflect the actual contents of it?
