Ok finally got it to work...
step 1: used the mini iso
step 2 : installed as explained above ( with encrypted )
step 3 : the installation failed
step 4 : bypassed the installation
step 5 : Installed grub bootloader
step 6 : installation complete
step 7 : boot from USB
step 8 : logged in
step 9 : apt-get install "DESKTOP GUI OF CHOICE"
FINALLY!

Sorry for that but yes this method requires some tools to be downloaded like VirtualBox, there's another method on persistent KALI USB setup which requires only the .ISO and Win32 Diskimager which is more easier and time saving than this one. It's present on KALI Linux documentation but it's not totally explained and beginners might get lost in the steps so I'm working on that one.

Thank your for your feedback, I'm gad my method works. I've noticed people are having trouble with the encrypted installation where they fail at the Installation Part, I'm working on another tutorial but will post a feedback about that Encrypted Drive install problem.
