Well water has a mass and I think if you add a man the mass of the man won't dissapear so i think the mass of the man will be added to the mass of the truck

The weight of the man will in fact be added to the weight of the water, which is in turn added to the weight of the truck.
Think of it like this if you had nothing and added it to some thing it would be well same.
But if you had some thing and added it to some thing else it's mass would increase.
Like when you submerge yourself in the tub you spot how the water seems to rise.
That's because your mass is increasing the water's mass in a way.
@light mass and weight are pretty much one in the same thing so to speak.
