I'm trying to understand the empty box method in more detail to keep all my claims air tight. When asked to send pictures of entire box + shipping label Would the fact the shipping weight is on the label cause the SE to fail?

Not necessarily. The empty box means you in particular didn't receive your item not that the company didn't send you one.
