Have any of you acomplished a refund from online stores of camera brands such as Canon / Nikon / Sony? They all seem to have fantastic costumer service policies, so I was just wondering how easy it could be.

I physically SEd (In-store) a video camera/camcorder many years ago, using the "wrong Item received" method. It was quite simple actually.
The same can be done via an online retailer.

How would you go about for an online retailer? buying something cheap from their store (lets say a bulk of paper) that is roughly the same weight as the expensive item to SE, and say the cheap item was sent by mistake instead of the expensive one? Would it work if I ordered both to one adress only?

Precisely.
The wrong Item must be one that they "stock" (Inventory), but If you order It from the very same store, don't do It on the same account. This will Instantly raise suspicion.

And do you think I could ship both items to my own home address - even if through different client accounts - , or is it advisable to ship them to two separate ones?

You can, but order the Items on separate days with a decent gap between both.
Alternatively, you can purchase the wrong Item from any retailer. As long as the store you're SEing stocks It, that's all that matters.
