Yes they will ask for signature, just put a straight line or some random name on it. Then be adamant it's not been delivered & you have no idea where's its been delivered or who supposedly signed for it. I usually wear a bit of a disguise when signing for stuff I'm gonna SE, hood up, glasses etc
How it was in your case in the end? Mine would arrive tomorrow, carrier DHL.. It was easy? Also wondering, almost all the time buying phones from Amazon, I just used it immediately, with this one, you wait till the refund or started to use it as the first moment?

Would avoid Oneplus now, they seem to have patched it & a huge number of people are been declined now for refunds in last few days

How do you know this? If this is true this is even more of a reason you should do it now as it looks like there is something wrong with the shipping company they are using.
