I've done my fair share of research but it's gotten so difficult these days determining which tutorials/guides I find are legit & work best.

I have a Samsung Galaxy S8+ Android Smartphone | G955U | Android 8.0

What is the best guide to go with that anyways knows of? With confidence.

I've read a number of mixed reports pertaining to rooting the S8- some have succeeded without Issues, whilst others claim they've experienced boot loops, screens flickering etc.

Do you happen to know of any phones in particular that are especially good for rooting? Preferably under $200 - $300 if possible.

There's always an element of risk when rooting a device, Irrespective of the cost.

In my country, I can purchase a pre-paid cell phone for around 35$. This Is what I'd personally be targeting- there's very little to lose should the rooting fail.
