Best high value items to do missing Item/partial method #1
What are some high value items (>1K) that are good for doing a missing-or partial SE?

These items should be below 100g.

Jewellery - bracelets, rings etc.

Luxury watch brands are also suitable.

Are there any dangers to reselling Luxury watches or jewellery that has been SE'd? Would those items count as stolen?

Also I'm thinking when buyers ask for an invoice of items that have been SE'd, should you give it to them or could that bite you in the ass if the buyer decides to service it or contact the store?

Not If there are no Identifiable markings that can potentially lead back to the seller - yourself.

No, do not give anything that can Identify the original purchase as yours.

Are store recommendations for SEi'ng watches/jewellery? Is there a value limit you recommend to stay within? I'm assuming Se'ing watches/jewellery worth >20K would require going through an ordeal.

For the most part, It depends on your account's standing.

To play It safe, I wouldn't exceed 5k.

Absolutely.

Expect a very lengthy Investigation with a high degree of complexities.

What is the value? If you're selling really high priced SE'd watches I assume almost all buyers will ask for an invoice or some papers.
