In the t.o.s stands:
The risk of damage and/or loss of products rests with the entrepreneur until the moment of delivery to the consumer or a representative designated in advance and made known to the entrepreneur, unless expressly agreed otherwise.
This means the SE will be a piece of cake right?

Correct, the watch was missing well and truly before the package reached your address.
Who's the company?

I've done EB with S7 in May (PR was required). They might have tighten their security protocolls since then because many people abused the EB with Apple back then (even with iPhones and Macs from what I've read).

I assume you’re talking about Amazon. I’m not using amazon but a dutch webshop

Yes, Apple was abused to the max and since then, they've been opening Investigations and cross-checking weights.

Can they crosscheck the weights? I've always heard that AirPods, apple watches weigh so little that they don't register the weight upon shipping?

Specifically IPhones and particularly Macs - both of which will register a weight on consignment.
