Peppermint (and usual Mint) are a great suggestion for windows users. However I honestly think we've moved on from the old scary days of linux where it was difficult for someone to move over - as long as you're relatively happy with computers then it shouldn't be a problem to use most distros - it's no different imo from learning to use android.
Yes, there's lots of scary command line stuff - but the average user won't need it at all and if they do it's usually just a case of looking up the commands with a quick google. Everything can be done with the GUI on most modern distros and its so easy to keep everything up to date.
