That is a very good introduction to how that stuff works in general. It explains the background about processors which most books and tutorials don't do.
If you want to work with both, Windows or Linux, you might preferably choose an assembler that works on both (e.g. NASM).

Projects: Simple projects are described in the various books about assembly. Once you want to do something more advanced, you could try to create a simple appending virus, a RunPE or a simple game. That really depends on your preferences. But the books should keep you busy for a while.
You can as well switch to reverse engineering after. This will sharpen your ASM skills as well, although you will only read it, not write it.
