In case the company doesn't talk about it, what shall we conclude?

It's not about the company disclosing the Information, but rather researching their terms & conditions.

Sometimes I find hard to have a concrete answer on their website, is there any other way to confirm that? for exemple, I can call them asking them if they are liable for that, because, I never ordered on-line and I am afraid of getting scammed bla bla bla

I saw one their website that, if my package does not arrive within 48H after being marked as delivered, to contact them.
Unfortunately I also read that "We recommend either a work address or someone present to accept delivery. Levi's® does not hold any responsibility for items which are lost or stolen."  So I supposed PEB is the only option here.

Sometimes the terms and conditions say one thing, but the company does another. Though I can only vouch for their customer service in the US, I have personally DNA'd Levi's numerous times with no pushback whatsoever - including multiple packages delivered at separate times on the same order.
Levi's is vouched for pretty regularly with DNA - and PEB - so it would seem that despite their terms stating this, they tend to lean towards making it right for the customer.

Not that you shouldn't proceed with caution and do what you feel comfortable with, or that TOS isn't useful, just wanted to chime in on Levi's specifically.

Do their TOS change from country to country? Also, thank for that info! At least it was done.

I'm not sure if TOS change from country to country for most businesses, as I haven't had a reason to check, but it doesn't hurt to check the US website if you see a lot of vouches for a place that claims they're not liable on their website for your country - that's an easy comparison that might make it easier to decide how to proceed.

In Levi's case, their US website TOS state the following: "All items purchased on the Website are made pursuant to a shipping contract. The risk of loss for all items purchased passes to you upon delivery of the items to the carrier. You are responsible for filing any claims with carriers for damaged and/or lost shipments."

Despite this, my experiences with Levi's have not followed this - they were very quick to refund immediately in chat when I claimed the packages did not arrive. I consistently see people DNA Levi's with little to not pushback.
Doesn't mean they won't enforce the TOS with you, of course - just my experiences! Best of luck whatever you decide!
