It is reasonable enough doubt to push an investigation for many Loss Prevention divisions of corporate businesses.
Also, clearing your EXIF data is more suspicious than leaving it be.
This is the result of a photoshop image being stripped of EXIF data:
This is the EXIF from my Phone camera, which for some "methods", provide a similar type image.
The absence of all this data would be more suspicious to me than just having a photoshop tag.

Photoshop is one of those image editors that likes to stick in metadata and EXIF data.
This means that it's possible for a company to check if you have used photoshop to edit the photo by checking its headers or whatever, and getting caught like that isn't so great since it kind of gives them a case against you for fraud.
Want to know how to avoid jail time?
Go and open Photoshop and go to File -> Save for web... once you're done editing that beautiful proof of purchase
Once you've completed those important steps, select JPEG as the picture type since most cameras take photos in JPEGs, then find the Metadata section and change it from "Copyright and Contact info" to "None".
Now as long as you did a half-decent 'shop you probably won't be acquitted on charges of falsifying receipts.
