Although I am late, your thread was well thorough and easily understood. I have personally, have been using SE methods through sites such as craiglist, offerup, facebook marketplace, and so on in order to gain S/N's. Thanks!

This might be a dumb question, but I've been out the game a very long time. What is the purpose of getting an items S/N during the SE process?

The purpose of obtaining a serial number would be to provide proof of owning an item that you don't have in your possession.

Lets say I just so happen to have the S/N to a MacBook Pro 2017, what method would work best in order to use SE to obtain one?

I do not have experience with Apple, but they will probably want more than just a serial number. Other companies are less stringent.
