Where do all of the proxies come from, random people's servers? Looks like There's the potential that people are monitoring your traffic.

This software downloads proxies from various sites like:-
aliveproxy
proxz
etc
also you can add your own server.

Yes, but do you know where the proxies are hosted? I could be hosting a proxy and monitor 100% of your HTTP traffic.

You are very much right. But, if you are using these proxies for any confidential or highly illegal work then I will recommend using a non logging VPN and over that VPN use these proxies.
Apart from that, every proxy found on WWW may be dangerous whether it be from aliveproxy or hidemyass.
As i said in case you have a trusted source for anonymous proxies, just put it in the list and block all other sources and the program will fetch the proxy list from user defined list only, alternatively download all proxy manually and put it in a notepad in the following form:-
proxy:port
and import it in Proxy switcher and it will check the proxy validity and proxy country.
