So my girlfriend just broke up with me, she packed her bags and went... Pretty pissed right now, didn't even do anything wrong, just came back from work and there was a note saying: "Sorry" So I am pretty pissed right now.

She owes you more than a note that says "Sorry".
Give her some time and ask her about this. If you don't care, then just let her go. Personally, I wouldn't feel too good if my partner left without notice and left a "Sorry" note.
