Where would you recommend I sell an Apple Watch? - not SE’d Apple directly but slightly wary of posting on eBay

I dont know where you're from but perhaps a local seller site e.g. Craigslist, Kijiji, Gumtree etc?

Thanks. Good point. Though presumably that’s only the case if the shop has reported the EB to Apple ? And given the watch part was missing, who’s to say that someone in the packing dept didn’t resell the watch?

Are you suggesting that the person In the packing department sold the watch, you purchased It, and then put It up for sale?
