I recommend both fairy tail and soul eater. As an anime soul eater is at it's best, while I prefer fairy tail as a comic.
Therefore soul eater. But I'm fine with either
Hope I didn't confuse you

Nevertheless, I recommend Ghost in the Shell: Stand Alone Complex.
Unless you want to take a very specific condition to the word "like"(in which case you could make an argument that there is no anime like tenchi muyo and never will be) there are PLENTY of shows like bebop. That isn't to take away from it's originality, just pointing out that if you like any aspect from bebop, there are several other anime that are similar to those elements that make up bebop. Really should ask what you liked about bebop and go from there, but here are a few examples of anime that I consider share the same spirit as CBB: Gintama, Dirty Pair, Outlaw Star, Planetes, Black lagoon,Miami Guns, Baccano!, Michiko to Hatchin, Gunsmith Cats, Gun x Sword, Big O,Waga Seishun no Arcadia and of course Samurai Shamploo
