I very rarely have issues with Skype and you think discord isn't logged?
It's definitely not paid as much attention to as Skype.

It all depends. Yes, some nodes are used for tracking, but a majority are operated like a node should.

Messages don't always send. No multiple voice channels. No fallback servers. Ip protection is absolute garbage, the list goes on.

There are ways to correlate traffic from an entry point to an exit node.

Internet lives on code, said code is always visible and readable. Hence all form of traffic is logged and watched.
