Could attempt to say that the Package had been tampered with, I'm not sure if they weigh the Package at each stop?

Besides boxing, its unlikely you can really do anything in that situation. One way to avoid this next time, if you do it again, is to be on your porch smoking around the rough time of delivery, get the package, sign with basically random whatever, and then claim it was stolen and you never received the package when it was marked delivered.

For that you have to not go inside in sight of the delivery van though, otherwise they'll know you have access to that actual house.

This is definitely your best option OP.

What if I claim that only one item has arrived (the mousepad), and atleast get a partial refund on the iron?

If they weigh at each stop and therefore weigh before giving it to you at your house, then you physically couldn't say that only the mousepad came, better going the other way around and saying the mousepad didn't arrive because it is the lighter of the two items.
