If i download Ubuntu to a usb drive and then start my computer with that usb drive in will it mess with my windows 8 or will it leave it as is. and if i take the usb stick out will it go back to windows 8. What all is Ubuntu used for?

It won't mess up your other OS since it's a live boot.

You can always just bring up a VM with Ubuntu and start exploring it that way. This will probably be easier in your case. Also, you can get a taste of a few different operating systems using virtual machines(Debian and RedHat based Linux, for example). I think it's always a good idea to try out the different distributions when you are learning Linux.

If you can read man pages you can install and learn any distribution.

Ubuntu is a Debian derivative, even though it's pretty much not backwards compat.
In my opinion one of the worst derivatives there is. Bulk/Bloat/Unnecessary packages dragged through repo.

What all is Ubuntu used for?

Its function is the same as Windows 8 or any other operating system, to provide you with an interface to, and interact with your computer hardware.

Ubuntu is simply one of the many free and open source alternatives to Microsoft's costly and closed source Windows operating system.
