The objective of the sealed box method, Is to not show any signs of tampering with whatever Item you've replaced. As such, It doesn't give them reason to check the return.
Both your suggestions will work fine, but If you want to play It safe (In the event they open It), replace It with a dummy MacBook.
Thanks - also is there any SE's I can do/is better to do if I pick up an item from a store instead of having it delivered?

In terms of In-store SEing, Officeworks Is open late every weekday and Is Inundated with customers on a Friday night, just before close of business.
As such, you can use the sealed box method by taking It to the service counter for a refund as per the above timing and event.
