Stating the obvious, the DNA.

Alternatively and depending on the packaging, the sealed box method Is very effective.

Provided an OTP Is not required on delivery, then the DNA method has a very good chance of success.

Put simply, you replace the original Item with anything of equal weight and pack It as per the manufacturer's state- without any signs of Inconsistencies/tampering.

When the company receives your return, they'll assume It's untouched and place It back Into stock. A refund/replacement will be Issued thereafter.

Tell them you've returned what they originally sent you.

For a macbook, should I order a dummy macbook? I assume it has the plastic seal on it so should I order something to make that as well? What happens if I just replace it with say a book that weighs the same?

The objective of the sealed box method, Is to not show any signs of tampering with whatever Item you've replaced. As such, It doesn't give them reason to check the return.

Both your suggestions will work fine, but If you want to play It safe (In the event they open It), replace It with a dummy MacBook.
