Is there an OS like Backtrack that can be used to replace droid? If not im gonna make one....but if there is let me know please, thanks.

Installing backtrack on a phone is possible (I have done it myself) but it would not actually replace Android. The guest OS will run in the background and you will need to vnc/ssh into it. There was something released a while back based off a Nokia but cost a lot of money (almost $1000)

There will be a lot of issues doing this though as you will need to ensure your wireless card can be put into monitor mode (if you plan to test wireless networks) and possibly other driver issues depending on the device.

I like both iOS and Android, but I feel more comfortable with iOS because it's much more stable and there is less lag than Android. I would love to see a bigger screen on the next iPhone with the same retina display, widgets, better camera, and more customizations.

Symbian is better for this than android or ios.

Get a linux distro. You can use Complete Linux installer app from the play store to install ubuntu or fedora, and even kali or backtrack if you want. You'll need a rooted phone for that. I'd suggest using ubuntu. They've a tablet version that you can install on your phone. You'll need Vnc viewer, android terminal emulator and ofcourse the complete linux installer app that will do the trick for you without bothering you.
