Interested in doing instore and online, but first I will do instore.
The problem is the government ID, I could make something that i could show off my phone but they may not accept that due to it not being physical. Any suggestions how i could go about this? hypothetically speaking of course.

If you'll be using the sealed box method, It won't Impact your ID.

Your return will go through many hands from the time It's processed, to when the buyer receives It, hence It's very difficult (If not Impossible) to deem you responsible for the Inconsistency.

I am still weighing up if i want to do an in-store though.

The store was NOT busy and I was the only customer at the service desk. Two employees examined the box seals briefly, asked me why i was returning the item and asked for my name and my address as I was returning the product for cash. Of course I told them my real name and address lol. I was a little caught off guard when they did ask for those details but I played It off and my refund was issued there and then.

The refund could have happened faster by doing it a little later in the day when it would have been busier as there were two employees at the service desk and both of them examined the seals (one of them was even feeling the seals itself) however it is hard to say whether they actually knew what they were looking for when feeling it.

these potentially. If i may add as well. There are two types of airpod 3rd gens. The ones made in china and the ones made in vietnam. Those stickers they will likely be the chinese ones. Just make sure that when you buy the airpods for SB make sure it is the chinese ones. OR you can find the vietnamese stickers as well so there will not be a discrepancy in hat regard
