What is 'anime'?
Let's get the basics out of the way first, shall we? The word "anime" is the abbreviation of the Japanese word for 'animation', meaning that "anime" means 'animation'. Anything that is animated through the use of hand-drawn images or computer generation is referred to as 'animation' and thus it is 'anime' by definition. This means that essentially, 'anime' and 'cartoon' is the same thing with different aims. 'Anime' doesn't have a specific aim or goal, where as 'cartoon' has the aim of humor. 'Anime' is varied in the topic, genre and focus, as well as art-style. (The art-style heavily depends on the artist(s) involved.) Oh and one more thing, even if we are talking plural then the word to use is; 'anime' and never the likes of; 'animes'.

Let's talk genres.
Anime is rather unique in the way that it is one prefix that covers more or less every possible genre and topic ever known in media, heck it has even made it's own genres because fans got bored of the old genres. Though even with that, you can easily start your travel into the anime life by only knowing the most general genres and expand your knowledge from there on. So with that said, let's talk about these 'general genres' and what they cover, do not fret, I'll be in-depth.

Main-genre & Sub-genre?
Almost all anime series today have more than one genre they fall under. When this is the case, the series normally have 1-2 main-genres at max while having any number of sub-genres that the creator managed to squeeze in there. The main-genre governs the main focus of the series, such as in a action anime, the action is the main focus, and in a drama series the drama takes the front stance. However, a action focused anime could have "comedy" as a sub-genre. A sub-genre are when a anime series uses traits from a different genre than it's main, but it isn't the main focus. Series such as One Punch Man is a good example of this, a series where action is the main focus, but comedy falls a close second.
Action Genre
A genre anime shares with most other entertainment media. Action governs series focused on pure action, often with another sub-genre like comedy or romance. In an action anime, the fights, the action provided by confrontations are what matters the most. However, there are also series that have "action" as a sub-genres, where the same traits of a pure action series is apparent but not in the main focus. A series where action is the main focus would be the likes of Dragon Ball Super and One Punch Man. While examples of series where action takes a step back and become a sub-genre would be series such as Full Metal Alchemist: Brotherhood and Code Geass: Hangyaku no Lelouch.
