I have a question. I've never used a VPS before. Does a VPS, have a UI with an operating system that you can see? Example:

Could I connect to a VPS and have what is essentially a virtual machine on my desktop? Do I actually see and control the OS like I would my own computer?

By default, Linux VPS's usually don't have a GUI. However, with OpenVZ/KVM/XEN based VPS's (not sure about other types, I guess it depends on the type), you can install a GUI depending on the OS. However, this eats RAM. You have to consider how much ram you're using before installing a GUI.

An alternative to the traditional desktop GUI is a web management panel, such as Webmin, ISPConfig, or *gulp* CPanel. These have features you can use from a traditional GUI, but they are VERY service oriented and much less about web browsing and stuff.

If you want to appear that this machine is you in your activities, you can use OpenSSH's dynamic forwards as a SOCKS proxy, or for some protocols, a protocol-specific proxy, such as ZNC for IRC services. You can also (on KVM/XEN VPS's, with difficulty on OpenVZ) install a VPN server.
