As you said, these apps are more concerned with appearances and the short bio/descriptions you can give. It's not a good way to value a person. If you're looking for something long term, I doubt you'll find it on a typical dating app. That's like going to McDonalds and expecting gourmet cooking. You're more likely to run into someone compatible just through common interests.
