So in december i am going back to england and i have questions.

1.If you want to buy a used car, what paperwork will you need?
2.Is the proof of address required to buy the car?

3.And for example if you buy a car roughly that costs 1000$ let's say this one how much the insurance will cost? and for how many months is it?

You don't need proof of address to buy a car privately (also known as second hand). You just need a wad of cash.

You are required to give an address for the vehicle to be registered to and the new owner documents to be sent to, but you'd blag making an address up and just driving around without the doc's.

There's a fair amount more to it than that.
Yes, you need an address to register it to, although I am not sure what documentation is required. Though Oni said I'm British and would know, I have not actually bought a car in the UK, ever. However, I do know that there is no feasible way for this forum to tell you how much insurance would cost. That depends on your age/how long you've been driving/location/make&model of the car/engine size/age of the car etc. You can shop around for quotes online if you know which vehicle you would be interested in. You also need to ensure the vehicle is taxed and has a valid MOT or you'll be breaking laws. Again, tax depends on the vehicle.
Those are just the costs associated with purchasing. That gumtree link is no longer valid so I can't see what you were looking at, but I would highly recommend a car with minimum 30 mpg otherwise you will be paying a lot for fuel which is super expensive there.
